This pecorino cheese is sustainably made with local sheep farmers who raise their own sheep, milk their sheep on site, and produce their pecorino cheese all in house. They have been creating this cheese for over 3 generations here in Tuscany. Their production is only available here in our region of Chianti and is now available to you through Our Tuscan Farm. This pecorino has been aged for a minimum of 8- 12 months. It is has a bold and strong flavor and is perfect to enjoy with fruit, nuts, red wine, or all on it,s own. This is a small production farm so all cheese is subject to availability.
